• Black Bean Burger Salad

    Ingredients

    Process

    1. Prepare black bean burger however you like (airfryer, stovetop, George Foreman grill or panini press, toaster oven, etc.)
    2. Chop tomato and cucumber; toss with salsa and layer on bottom of a plate
    3. Crumble black bean burger over salad base
    4. Sprinkle cheese immediately on top so it melts a little
    5. Add sour cream, lettuce, and cilantro

    Notes

    • Can mix sour cream with salsa to make a kind of sauce
    • Use whatever brand of black bean burgers you like, except the Don Lee Farms ones, which are bland with no flavor.

    Layer tomatoes and cucumbers on white bread and top with a slice of American cheese.

    Notes

    • Don’t discard the tomato seeds, let the tomato juices drip onto the bread to hydrate it and keep from having a dry sandwich without the need for mayo
    • Add Sriracha or hot sauce of choice for a kick of heat

    Tuck a 2-egg omelette into a 10″ flour tortilla and add 2 slices of melting cheese (I like American). Warm in toaster oven, airfryer, or in a dry pan on the stovetop until cheese is melted.

  • Steamed Corn on the Cob

    Makes up to 6 corncobs

    Process

    1. Add 1 cup of water to instant pot and drop in trivet
    2. Layer corncobs in hash pattern (2 parallel, then 2 perpendicular to them on top and so on)
    Pressure: High
    Time: 3 minutes
    Release: Quick
    

    Notes

    • Up to 6 ears of corn will fit in a 6qt instant pot.
    • Delicious alone, better rubbed with salted butter immediately out of the pot (I recommend Kerrygold)
    • You can also cover the corn with elote accoutrements
  • Fish on a Bed of Salad

    Pair breaded and frozen white fish fillets on a pile of lightly dressed, bagged salad.

    Assembly

    1. Prepare the fish in toaster oven, air fryer, George Foreman grill, or panini press (no need for any extra oil).

    Both Instant Pot and stovetop instructions are included. I prefer the IP, as it’s faster and more hands-free.

    1 cupred lentils (masoor dal)

    1 Tcumin seeds
    1¼ tspsalt, to taste
    ½ tspblack pepper (optional)

    Process

    Instant Pot

    1. Wash the rice and lentils (same bowl is fine), soak for up to 30 minutes (soaking is optional)
    2. Place all ingredients in IP, close lid and seal.
    Pressure: High
    Time: 7 minutes
    Release: 10 minutes natural
    
    1. Fluff rice carefully before serving.

    Stovetop

    1. Wash rice and lentils together and add to a heavy-bottomed pot along with the listed amount of water and black pepper
    2. Boil until 80% done (or until there’s just enough water left for “dam,” which is to finish cooking something via steaming)
    3. Add oil and cumin seeds, stir to distribute and set pot to dam/steam
    4. Once finished, fluff rice and serve.

    Notes

    • Stovetop will generally require double the amount of water vs the instant pot method
    • Increase oil for a more moist kichri (recipe as listed is slightly dry).
    • Pairs really well with achar (spicy pickles packed in oil)
    • Salt is the main flavor component, so make sure it’s adequately salted. Start with 1 tsp per the recipe and adjust to your tastes.
